Weekly Sustenance

I cook for just myself (I live with two flatmates who are very tall and eat more than twice what I do...I am not willing to pay for that kind of rapid depletion in refrigerator stocks). This inevitably means doing a lot of cooking. I tend to like to get it done mostly all in one night; I don't mind eating the same food for a few days in a row. 
This week I made a tonne of different side dishes which I will combine in different ways throughout the week. So last night I started with frying up some zucchini pasta in coconut oil with some fish sauce. I wish you could get Red Boat fish sauce cheap enough in NZ, the one I use has a tiny bit of added sugar...darn. I use an oxo julienne peeler for this, I frequently cut the tips off my fingers, but it is worth it. 

I was super hungry after finishing a BoxFit session at the local boxing gym (so many burpees!) that I ate a portion with some defrosted spaghetti bolognaise sauce (made with beef, spinach, mushrooms and tomato puree among other things). 

Once I had stuffed that into my gob (while watching Who Wants to be a Millionaire of course) I fried up some bacon and used the fat I yielded to saute some asparagus spears, yay for asparagus season! 

While I was cooking those I roasted some Cocoa-toasted Cauliflower in the oven, guys it is so yummy! I ate some of it straight of the pan (my dinner does look a bit small in that photo, that's my excuse anyway). As my luck usually goes I burnt my hand doing this...silly Naomi. 

Once I had segregated everything into containers in the fridge, ah that reminds me, I should do something with that capsicum...
I snapped some more photos of the cauliflower, my after dinner nibbles (which was really me trying to get some more fat into my belly for the day) of frozen strawberries in coconut milk and dark chocolate. 

  I also whipped up a batch of Bora Bora Fireballs (sans cayenne pepper) from Melissa Joulwan's amazing recipe book (Well Fed).

And of course the sunshine sauce - a kind of cheater satay sauce, only way better (also from her book) to go with them =). Happy happy belly.
